Currently on osgeo7-pycsw:

Can we have a more recent version of Docker / Docker Compose? If updating the OS makes things easier/required, I'm fine with that too given the demo setup is fully reproducible.

The easiest thing to do is to just give you a new setup using the OSGeo Ubuntu 24.04 image I made with in #3340 and that I used to build out - #3322.
That would also give you opportunity to check out the new one before we delete the old one.
