nginx: do not advertise server version

In case of a trac failure like the following example from trac staging:

502 Bad Gateway
______________________________
nginx/1.18.0 (Ubuntu)

better do not advertise the server version.

Possibly (no nginx expert here) done with:

server_tokens off;
