Add deselecting fields("reverse selecting") option in ogr2ogr.

This is an understandable wish from users point of view and I would also use it if it exists. However, SQL users must tolerate to to write every single attribute into SELECTs, as well as users of WFS services into the propertyName list. Thinking of how complicated it would be to implement - parse the list of all attributes, check the deselected ones, build SQL query from what remains - I would be ready to close this ticket as "wontfix".
