Set `html-chunked` as a default for docs

Currently the default for building the doc is a single page called postigs.html. This causes some minor problems:
- not being called
index.html
it is not rendered by default in apache - being pretty large it requires a long time to load and render.
Packages (e.g. Debian) take the default.
I suggest therefore to use the target html-chunked
as a default, and rename the output.
