Through these files, you can probably figure out almost all of what OpenLayers can do at the surface level: there are over 90 examples here, and they demonstrate many of the layers, controls, etc. It is usually best to start with an example, and work your way forward from there. If you have never used OpenLayers before: Start Here!
Documentation for OpenLayers. This is full library documentation: every class, property, and method is documented here in various stages of completeness.

The code. Check it out from here with an GIT or SVN client (see how to download), or browse specific files through your web browser.
Links to various release pages. the wiki/Release/Version page lists current bugs, closed bugs, etc. and is generally a good tracking point for the current release.
